Tikka Rice with Crispy Cauliflower

Ingredients

Crispy cauliflower

  • 1 cauliflower, cut in bite-sized bits
  • Oil for frying

Coating

  • 1/2 cup rice flour
  • 2 tablespoons cornflour
  • 1 teaspoon salt
  • 1 teaspoon chili powder

Marinade

  • 3 tablespoons coconut yogurt
  • 1 teaspoon turmeric
  • 1 teaspoon cumin powder
  • 2 teaspoons coriander powder
  • 1/2 tablespoon garam masala
  • 2 teaspoons chili powder
  • 1 tablespoon ginger powder
  • 1 teaspoon amchur powder
  • 1/2 tablespoon smoked paprika
  • 2 teaspoons salt

Tikka masala rice

  • 1 onion, thinly sliced
  • 4 tomatoes, roughly chopped
  • 1 cup coconut yogurt
  • 1 teaspoon turmeric
  • 1 tablespoon coriander powder
  • 1 tablespoon tikka masala spice
  • 1 cup basmati rice
  • Water: up to 1.5 cups
  • 1 tablespoon oil
  • Salt to taste

Preparation

  1. Marinate cauliflower in listed ingredients for 30 minutes

  2. Coat with a mixture of listed coating ingredients

  3. Fry till crispy

  4. Heat oil in a pan and add onions and a pinch of salt, cook till onions are translucent

  5. Add tomatoes and spices and cook till soft

  6. Add coconut yogurt and blend to form a soupy mixture

  7. Let mixture completely cool, then add rice and 1 cup water

  8. Cover pan with lid and cook rice on low flame till done

  9. Serve the crispy cauliflower with the tikka masala rice
