Crunchy Cauliflower with Rice Flour Coating

Ingredients

  • 1 large cauliflower
  • Oil for frying

Coating

  • 1/2 cup rice flour
  • 2 tablespoons cornflour
  • 1 teaspoon salt
  • 1 teaspoon chili powder

Marinade

  • 3 tablespoons coconut yogurt
  • 1 teaspoon turmeric
  • 1 teaspoon cumin powder
  • 2 teaspoons coriander powder
  • 1/2 tablespoon garam masala
  • 2 teaspoons chili powder
  • 1 tablespoon ginger powder
  • 1 teaspoon amchur or dried mango powder
  • 1/2 tablespoon smoked paprika
  • 2 teaspoons salt

Preparation

  1. Cut the cauliflower into bite-sized pieces

  2. Blanch the cauliflower in boiling water for 2-3 minutes

  3. Marinate the cauliflower in the marinade ingredients for 30 minutes

  4. Mix all the coating ingredients in a bowl

  5. Dip the marinated cauliflower in the coating powder to coat evenly

  6. Fry until crispy
