Flavorful Vegetarian Koftas

Ingredients

  • Carrots - 2 medium size (peeled and grated)
  • Spinach - 1 cup (finely chopped)
  • Cauliflower - 1/2 cup (grated)
  • Red chilli powder (Kashmiri) - 1 tsp
  • Black pepper powder - 1/4 tsp
  • Coriander powder - 1/2 tsp
  • Green chillies - 1/2, chopped
  • Garam masala - 1/2 tsp
  • Salt, to taste
  • Coriander leaves - 1/4 cup
  • Nuts of your choice - 1/3 cup (coarsely ground, such as almonds and cashewnuts)
  • Chickpea flour - 1/2 cup (for binding)
  • Water, as needed to bind the mixture
  • Oil, for frying

Preparation

  1. Grate the carrots and squeeze out any excess water. Keep the water aside to use for binding the mixture later.

  2. In a bowl, combine the grated vegetables, red chilli powder, black pepper powder, coriander powder, green chillies, garam masala, salt, coriander leaves, and coarsely ground nuts. Mix well.

  3. Add chickpea flour to the mixture. If there is any juice released from the vegetables, add that as well. If needed, add water gradually to form a medium soft mixture. Avoid making it too hard or too soft.

  4. Mix the ingredients thoroughly until well combined.

  5. Shape the mixture into small to medium-sized balls, forming the koftas.

  6. Heat oil in a pan for deep frying. Fry the koftas on medium heat until they turn golden brown. Ensure they are cooked from the inside by avoiding high heat.

  7. Once cooked, remove the koftas from the oil and drain them on a paper towel.

  8. Serve the vegetarian koftas with chutney of your choice, such as Tamarind Chutney and Yogurt.
