​Madras Soya Chunk Masala

Ingredients

  • soya chunks: 1 1/2 c boiled in water till soft
  • onion: 1 minced
  • tinned tomatoes: 1 c
  • ginger: 1 inch grated
  • mustard seeds: 1
  • urid dal: 2 t
  • dried red chilli: 1
  • turmeric: 2 t
  • ginger powder: 1 t
  • chilli powder: 2 t
  • coriander powder: 1/2 t
  • roasted curry powder: 1/2 - 1 t depending on heat
  • coconut cream: 2 t
  • xylitol/ sugar: 1/2 t
  • water: 1/2 c
  • oil: 4 t
  • salt to taste

Preparation

  1. Marinate cooked soya chunks with 1 t turmeric, ginger powder, chilli powder, coriander powder and salt

  2. Heat 3 T oil in a wok. Stir fry soya chunks for few minutes and keep aside

  3. Heat 1 T oil in a pan and add mustard seeds, urid dal and dried chilli

  4. When mustard seeds splitter add ginger and onions

  5. When onions begin to lighten add tomatoes, sugar, 1 t turmeric and curry powder

  6. Cook for a few minutes and add coconut cream, water and soya chunks. Season as desired.​
