Spicy Potatoes with Sticky Rice

Ingredients

  • 3-4 potatoes
  • 3 shallots
  • 2 garlic cloves
  • 1 cm ginger
  • 10 cherry tomatoes
  • 1 tablespoon tomato paste
  • 2 green chilies
  • 3 tablespoons oil
  • 2 tablespoons water
  • 1 teaspoon salt

Whole spices

  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds

Powdered spices

  • 1 teaspoon turmeric
  • 0.5 tablespoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon fennel powder
  • 1 teaspoon amchur powder

Preparation

  1. Soak prepared potatoes in cold water for 20 minutes, drain and pat dry

  2. Heat oil in a pan and add whole spices, ginger, garlic and chilli. Fry for a few minutes and add onions and salt

  3. Fry till onions are translucent, then add tomato paste, cherry tomatoes and powdered spices.

  4. Cook frequently frying for 7-8 minutes. If the mixture begins to stick to the pan deglaze with a few tablespoons of water.

  5. Mix in potatoes and cook with a lid on till potatoes are soft

  6. Enjoy with hot sticky rice
