Vegan Tikka Rice with Crispy Cauliflower

Ingredients

Crispy cauliflower

  • Cauliflower: 1 cut in bite sized bits
  • Oil for frying
  • Rice flour: 1/2 C
  • Cornflour: 2 T
  • Salt: 1 t
  • Chilly powder: 1t
  • Coconut yogurt: 3 T
  • Turmeric: 1t
  • Cumin powder: 1t
  • Coriander powder: 2t
  • Garam masala: 1/2 T
  • Chilly powder: 2 t
  • Ginger powder: 1T
  • Amchur powder: 1 t
  • Smoked paprika: 1/2 T
  • Salt: 2 t

Tikka masala rice

  • Onions: 1 thinly sliced
  • Tomatoes: 4 roughly chopped
  • Coconut yogurt: 1 C
  • Turmeric: 1 t
  • Coriander powder: 1 T
  • Tikka masala spice: 1 T
  • Basmati rice: 1 C
  • Water: upto 1 1/2 C
  • Oil: 1 T
  • Salt to taste

Preparation

  1. Marinate cauliflower in listed ingredients for 30 minutes

  2. Coat with a mixture of listed coating ingredients

  3. Fry till crispy

  4. Heat oil in a pan and add onions and a pinch of salt. Cook till onions are translucent

  5. Add tomatoes and spices and cook till soft

  6. Add coconut yogurt and blend to form a soupy mixture

  7. Let mixture completely cool, then add rice and 1 C water

  8. Cover pan with lid and cook rice on low flame till done

  9. Serve the crispy cauliflower with the tikka masala rice
