Easy Black Bean Burrito with Vegetables
Ingredients
- 3 whole grain wraps
- 1 @rightfoods Black Bean Soup cup
- Hot water
- 1 tablespoon nutritional yeast
- 1-2 teaspoons hot sauce
- 1 vegetable of choice (e.g., zucchini)
- 1 cup greens of choice
- 1/2 cup thawed frozen corn
- 1 avocado
Preparation
Set a tea kettle with water and bring it to a boil.
Open the @rightfoods Black Bean Soup cup and add the seasoning packet, 1 tablespoon nutritional yeast, and 1-2 teaspoons hot sauce.
Pour boiling water into the cup, slightly underfilling to the line provided.
Stir together and allow to cool and thicken. Set aside.
Sauté the diced vegetable of choice until tender.
Lay a whole grain wrap flat on a clean surface.
Add 3-4 tablespoons of the black bean mixture, 2-3 slices of sautéed vegetables, a few green leaves, 2 tablespoons of corn, and 1-2 slices of avocado.
Wrap and roll into a burrito.
Optionally, sear the burrito on a skillet on both sides before serving.
Serve with optional sides like sweet potato fries.
