Fried Selar Fish Cake
Ingredients
- 500 grams selar fish meat or similar
- 1 egg
- Salt to taste
- Sugar to taste
- Ground pepper to taste
- 250 ml iced water
- Approximately 300 grams tapioca flour
- Oil for frying
Spice mixture
- 8 shallots
- 5 garlic cloves
Red vinegar sauce
- 8 red chilies
- 3 garlic cloves
- Sugar to taste
- Salt to taste
- Key lime juice to taste
- Water as needed
Preparation
Grind the fish finely and place in a bowl.
Add iced water, whole egg, sugar, salt, and ground pepper; mix well.
Add the coarsely pounded shallots and garlic; stir to combine.
Gradually add tapioca flour while mixing until evenly incorporated.
Shape the mixture as desired.
Heat oil in a pan and fry until golden and cooked.
Serve with red vinegar sauce or to taste.
Red vinegar sauce
Briefly boil 8 red chilies.
Smash 3 garlic cloves.
Blend the chilies and garlic together.
Add sugar, salt, key lime juice, and water; adjust seasoning to taste.
