Fried Selar Fish Cake

Ingredients

  • 500 grams selar fish meat or similar
  • 1 egg
  • Salt to taste
  • Sugar to taste
  • Ground pepper to taste
  • 250 ml iced water
  • Approximately 300 grams tapioca flour
  • Oil for frying

Spice mixture

  • 8 shallots
  • 5 garlic cloves

Red vinegar sauce

  • 8 red chilies
  • 3 garlic cloves
  • Sugar to taste
  • Salt to taste
  • Key lime juice to taste
  • Water as needed

Preparation

  1. Grind the fish finely and place in a bowl.

  2. Add iced water, whole egg, sugar, salt, and ground pepper; mix well.

  3. Add the coarsely pounded shallots and garlic; stir to combine.

  4. Gradually add tapioca flour while mixing until evenly incorporated.

  5. Shape the mixture as desired.

  6. Heat oil in a pan and fry until golden and cooked.

  7. Serve with red vinegar sauce or to taste.

Red vinegar sauce

  1. Briefly boil 8 red chilies.

  2. Smash 3 garlic cloves.

  3. Blend the chilies and garlic together.

  4. Add sugar, salt, key lime juice, and water; adjust seasoning to taste.
