Crispy Battered Oyster Mushrooms
Ingredients
- 150 grams oyster mushrooms
- 200 grams all-purpose flour
- 2 tablespoons tapioca flour
- Salt to taste
- Pepper powder to taste
- Garlic powder to taste
- Oil for frying
Sambal
- 7 red chilies
- 3 bird's eye chilies
- 1 tomato
- 5 shallots
- 2 cloves garlic
- Shrimp paste to taste
- Salt to taste
- Granulated sugar to taste
- Shaved palm sugar to taste
- Cooking oil
Preparation
Mix the all-purpose flour and tapioca flour with salt, pepper powder, and garlic powder until well combined.
Take a portion of the dry mixture and add water to make a batter of medium consistency.
Dip the oyster mushrooms in the wet batter, then coat with the dry mixture, squeezing gently and pinching.
Fry in hot oil until golden brown.
Remove and drain, serve warm with your favorite dip.
Sambal
Fry the red chilies, bird's eye chilies, shallots, garlic, and shrimp paste until wilted.
Pound all the ingredients together, add salt, granulated sugar, and shaved palm sugar to taste, and adjust seasoning.
Tips
Serve the fried mushrooms warm for the best texture.
Adjust the sambal spiciness and sweetness based on personal preference.
