Traditional Indonesian Genjer Belacan Stir-Fry

Ingredients

  • 250 grams genjer
  • 1 tablespoon palm sugar
  • 1/2 teaspoon salt
  • 1 teaspoon totole
  • 80 milliliters water

Spice paste

  • 10 bird's eye chilies
  • 5 red curly chilies
  • 1 tablespoon shrimp paste
  • 2 garlic cloves
  • 5 shallots
  • 1/2 tomato

Preparation

  1. Wash the genjer and chop it coarsely, then soak in salted water until any dirt or insects are removed, rinse thoroughly with running water and drain.

  2. Stir-fry the ground spice paste until fragrant and cooked.

  3. Add water and season with salt, sugar, and totole.

  4. Increase the heat, add the genjer, and stir quickly, then cover for a short time and stir again.

  5. Taste and adjust seasoning if necessary.

  6. Remove from heat and serve.

Tips

  1. Do not blanch the genjer beforehand for a fresher taste.

  2. This dish is best served with warm rice and fried protein such as tofu or meat.
