Traditional Indonesian Genjer Belacan Stir-Fry
Ingredients
- 250 grams genjer
- 1 tablespoon palm sugar
- 1/2 teaspoon salt
- 1 teaspoon totole
- 80 milliliters water
Spice paste
- 10 bird's eye chilies
- 5 red curly chilies
- 1 tablespoon shrimp paste
- 2 garlic cloves
- 5 shallots
- 1/2 tomato
Preparation
Wash the genjer and chop it coarsely, then soak in salted water until any dirt or insects are removed, rinse thoroughly with running water and drain.
Stir-fry the ground spice paste until fragrant and cooked.
Add water and season with salt, sugar, and totole.
Increase the heat, add the genjer, and stir quickly, then cover for a short time and stir again.
Taste and adjust seasoning if necessary.
Remove from heat and serve.
Tips
Do not blanch the genjer beforehand for a fresher taste.
This dish is best served with warm rice and fried protein such as tofu or meat.
