Herby Pea Ricotta Toast

Ingredients

  • 1 slice little northern bakehouse bread
  • 1 tablespoon kite hill foods vegan cashew ricotta
  • 1/2 lemon, juiced
  • 1/2 teaspoon wholesome sweet raw agave
  • handful of chives
  • handful of parsley
  • handful of mint
  • handful of basil
  • salt and pepper
  • 1/4 cup green peas
  • handful of ray family farms ia pea tendrils
  • sprinkle of trader joes everything but the bagel seasoning

Preparation

  1. Add all herbs, lemon juice, salt and pepper, and agave to a blender and purée until smooth.

  2. Add peas to a bowl and top with the dressing to marinate for a few minutes while you prepare the toast.

  3. Spread the toast with ricotta and spoon the marinated peas on top.

  4. Top with pea tendrils and a sprinkle of everything but the bagel seasoning.
