Herby Pea Ricotta Toast
Ingredients
- 1 slice little northern bakehouse bread
- 1 tablespoon kite hill foods vegan cashew ricotta
- 1/2 lemon, juiced
- 1/2 teaspoon wholesome sweet raw agave
- handful of chives
- handful of parsley
- handful of mint
- handful of basil
- salt and pepper
- 1/4 cup green peas
- handful of ray family farms ia pea tendrils
- sprinkle of trader joes everything but the bagel seasoning
Preparation
Add all herbs, lemon juice, salt and pepper, and agave to a blender and purée until smooth.
Add peas to a bowl and top with the dressing to marinate for a few minutes while you prepare the toast.
Spread the toast with ricotta and spoon the marinated peas on top.
Top with pea tendrils and a sprinkle of everything but the bagel seasoning.
