Sourdough Toast with Smashed Peas, Mint, and Lemon
Ingredients
- 100 g frozen green peas
- 1 tbsp tahini or coconut milk
- 1 tsp lemon juice
- zest from 1/4 lemon
- 5 chopped fresh mint leaves
- salt and black pepper
- 2 slices of bread (sourdough preferred)
- 1 garlic clove
Optional toppings
- beetroot sprouts
- chives
- lemon zest
- mint leaves
Preparation
Thaw your peas by letting them sit at room temperature or blanching them quickly in boiling water.
Mash the peas with a fork and add tahini or coconut milk, lemon juice, lemon zest, mint, salt, and black pepper, then mash together.
Toast your bread, then cut the garlic clove in half and rub it against the toasted surface.
Spread the pea mash on the toast, add optional toppings, and enjoy.
