Sourdough Toast with Smashed Creamy Lemon Peas, Mint and Pink Sprouts
Ingredients
- 100 g frozen green peas
- 1 tbsp tahini or coconut milk
- 1 tsp lemon juice
- zest from 1/4 lemon
- 5 finely chopped fresh mint leaves
- salt and black pepper
- 2 slices of sourdough bread
- 1 garlic clove
Optional toppings
- beetroot sprouts
- chives
- lemon zest
- mint leaves
Preparation
Thaw the peas by letting them sit at room temperature or by blanching them quickly in boiling water.
Mash the peas with a fork and add tahini or coconut milk, lemon juice, lemon zest, finely chopped mint leaves, salt, and black pepper, then mash until well combined.
Toast the sourdough bread slices. After toasting, cut the garlic clove in half and rub it on the surface of the toast.
Spread the pea mash on the toast, add optional toppings, and enjoy.
