Vegan Tofu Scramble and Avocado Toast

Ingredients

Tofu scramble

  • 2 tbsp of olive oil
  • 1 clove of garlic
  • 450g firm tofu
  • 1/4 tsp turmeric
  • 1 tsp cumin
  • 1 tbsp nutritional yeast
  • 1 tsp soy sauce
  • Sea salt and black pepper to taste
  • 10g flat leaf parsley leaves

Avocado toast

  • 1 large ripe avocado
  • 1 lemon
  • Pinch curry powder
  • Pinch cayenne pepper
  • Pinch sea salt
  • 2 slices of granary sourdough toast
  • 100g Kale
  • Pinch chilli flakes
  • 1 tbsp extra virgin olive oil

Preparation

  1. Heat olive oil in a pan over medium heat

  2. Add minced garlic and sauté for 1-2 minutes until fragrant

  3. Crumble the tofu and add to the pan, stirring to combine

  4. Mix in turmeric, cumin, nutritional yeast, soy sauce, sea salt, and black pepper; cook for 5-7 minutes until heated through

  5. Stir in chopped parsley and remove from heat

  6. For the avocado toast: Mash avocado in a bowl with lemon juice, curry powder, cayenne pepper, and sea salt

  7. Toast the sourdough bread until golden

  8. In a separate pan, heat extra virgin olive oil over medium heat, add kale and chilli flakes, and sauté for 3-5 minutes until wilted

  9. Spread the mashed avocado mixture on the toasted bread and top with sautéed kale
