High Protein Teriyaki Cauliflower Fried Rice
Ingredients
- 60g Textured Vegetable Protein (dry)
- 200g Cauliflower Rice
- 1 Carrot (chopped)
- 60g Frozen Edamame (thawed)
- 2 Garlic (clove, minced)
- 1 Stalk Green Onion (chopped)
- 1/2 Cup Pineapple
- 20g Tamari (divided)
- 10ml Sesame Oil
- 1/4 Cup Teriyaki Sauce
- 1/4 Cup Water
- 1 Tsp Ground Ginger
- Chili Flakes to Garnish
Preparation
Rehydrate the TVP as per package directions. Set aside.
In a small bowl combine the tamari, garlic, ginger and teriyaki sauce. Set aside.
In a non-stick pan on a medium/high heat add the water and chopped carrots and cook for 5 minutes than add the sesame oil and pineapple to the pan and cook for 2-5 more minutes.
Reduce the heat to medium and transfer the rehydrated TVP, cauliflower rice, edamame’s, green onions and teriyaki sauce mixture to the pan combining well and cook for another 5 minutes continually stirring.
Serve and garnish with a crack of pepper and chili flakes.
