High Protein Teriyaki Cauliflower Fried Rice

Ingredients

  • 60g Textured Vegetable Protein (dry)
  • 200g Cauliflower Rice
  • 1 Carrot (chopped)
  • 60g Frozen Edamame (thawed)
  • 2 Garlic (clove, minced)
  • 1 Stalk Green Onion (chopped)
  • 1/2 Cup Pineapple
  • 20g Tamari (divided)
  • 10ml Sesame Oil
  • 1/4 Cup Teriyaki Sauce
  • 1/4 Cup Water
  • 1 Tsp Ground Ginger
  • Chili Flakes to Garnish

Preparation

  1. Rehydrate the TVP as per package directions. Set aside.

  2. In a small bowl combine the tamari, garlic, ginger and teriyaki sauce. Set aside.

  3. In a non-stick pan on a medium/high heat add the water and chopped carrots and cook for 5 minutes than add the sesame oil and pineapple to the pan and cook for 2-5 more minutes.

  4. Reduce the heat to medium and transfer the rehydrated TVP, cauliflower rice, edamame’s, green onions and teriyaki sauce mixture to the pan combining well and cook for another 5 minutes continually stirring.

  5. Serve and garnish with a crack of pepper and chili flakes.
