Mediterranean Chopped Salad
Ingredients
- 1 avocado chopped
- large carrot cubed
- 1 medium tomato
- 1 small cucumber
- hearts of palm sliced
- 1 tbsp of capers
- 1/3 cup sliced olives
- can of garbanzo beans
- juice from 1 lemon
- drizzle of grape seed oil
- 1/3 cup chopped fresh parsley
- 1/3 cup chopped fresh cilantro
- salt & pepper to taste
Preparation
Chop all the veggies into relatively the same bite size pieces
Make sure to deseed the Tomato
Add all the ingredients into a large bowl and mix well
Tip: add the Avocado right before serving
