Salad of Leftovers for One

Ingredients

  • 2 leftover beetroot burgers broken into small pieces
  • 1 cup rocket
  • 1/2 cup blanched broccoli florets
  • 1/4 avo diced
  • 1 small radish finely sliced
  • 2 Tbsp dried pomegranate arils
  • Black cumin seeds
  • 2 Tbsp Sun-dried tomato pesto
  • Drizzle of olive oil
  • Juice of half a lemon
  • Salt flakes
  • Black pepper

Preparation

  1. Add the salad ingredients to a large bowl

  2. Mix in the pesto, lemon juice and drizzle with olive oil and toss to combine well

  3. Top with the black cumin seeds and pomegranate arils
