Salad of Leftovers for One
Ingredients
- 2 leftover beetroot burgers broken into small pieces
- 1 cup rocket
- 1/2 cup blanched broccoli florets
- 1/4 avo diced
- 1 small radish finely sliced
- 2 Tbsp dried pomegranate arils
- Black cumin seeds
- 2 Tbsp Sun-dried tomato pesto
- Drizzle of olive oil
- Juice of half a lemon
- Salt flakes
- Black pepper
Preparation
Add the salad ingredients to a large bowl
Mix in the pesto, lemon juice and drizzle with olive oil and toss to combine well
Top with the black cumin seeds and pomegranate arils
