Perfect Summer Salad with Tomatoes and Burrata
Ingredients
- 500g mixed tomatoes
- 100g broad beans
- Handful of basil, parsley, mint, chives and tarragon
- 2 tsp Dijon mustard
- 3 tbsp olive oil
- 1 tbsp red wine vinegar
- 1 lemon, zest only
- 2 x burrata balls
Preparation
Roughly chop the tomatoes and place in a bowl with a sprinkle of salt and pepper. Set to one side.
Cook the broad beans for 2 mins, then drain and cool under running water.
Add the herbs to a bowl along with the mustard, oil, vinegar, lemon zest and broad beans, then stir together.
Plate up the tomatoes with the burrata on top, then drizzle over the herby salsa verde and serve.
