Simple Sardine Salad Sandwich or Dip

Ingredients

  • 2 cans Sardines
  • 3-4 tbsp Mayo
  • 2 tbsp Dijon mustard
  • Juice of 1/2 lemon
  • 2 tbsp olive oil if not using sardines packed in oil
  • 4 tbsp capers, chopped
  • 1/2 cup diced celery and red onion
  • Bunch of chopped parsley or cilantro
  • Pinch of sea salt and a grind of black pepper

Preparation

  1. Mash up the sardines in a bowl.

  2. Add all the remaining ingredients.

  3. Mix everything together well.

  4. Serve as a sandwich on toasted bread with avocado or as a dip with crackers.

  5. Note: You can halve the recipe if you want a smaller portion.
