Rainbow Mango Edamame Crunch Salad
Ingredients
- 2 big handfuls mixed greens
- 1/3 cup shredded purple cabbage
- 1/3 cup shredded carrots
- 1 scallion, diced
- 1/2 mango, peeled and cubed
- 1/2 cup edamame
- A sprinkle of sesame seeds and peanuts (optional)
- Fresh cilantro
Dressing
- 1.5 tablespoons extra virgin olive oil
- 1 tablespoon soy sauce
- 1 teaspoon red curry paste
- 1 heaping teaspoon creamy peanut butter
- Juice of half a lime
Preparation
Whisk together the olive oil, soy sauce, red curry paste, peanut butter, and lime juice until smooth
In a large bowl, combine the mixed greens, purple cabbage, carrots, scallion, mango, edamame, sesame seeds, peanuts, and cilantro
Pour the dressing over the salad and toss gently to coat
Serve immediately
