Rainbow Mango Edamame Crunch Salad

Ingredients

  • 2 big handfuls mixed greens
  • 1/3 cup shredded purple cabbage
  • 1/3 cup shredded carrots
  • 1 scallion, diced
  • 1/2 mango, peeled and cubed
  • 1/2 cup edamame
  • A sprinkle of sesame seeds and peanuts (optional)
  • Fresh cilantro

Dressing

  • 1.5 tablespoons extra virgin olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon red curry paste
  • 1 heaping teaspoon creamy peanut butter
  • Juice of half a lime

Preparation

  1. Whisk together the olive oil, soy sauce, red curry paste, peanut butter, and lime juice until smooth

  2. In a large bowl, combine the mixed greens, purple cabbage, carrots, scallion, mango, edamame, sesame seeds, peanuts, and cilantro

  3. Pour the dressing over the salad and toss gently to coat

  4. Serve immediately
