Sesame Tofu Mixed Salad

Ingredients

Dressing

  • 1/4 cup tamari or soy sauce
  • 1/4 cup rice vinegar
  • 2 tbsp maple syrup
  • 1 tbsp olive or avocado oil
  • 1/4 cup water
  • 1/2 tbsp sesame oil
  • 1 garlic clove
  • 1 cube of ginger (about 1 tbsp)

Salad

  • 1 block of firm tofu, pressed and cubed
  • 4 cups spinach
  • 1 cup small orange slices such as clementine or mandarin
  • 1 cup tomatoes, chopped
  • 1/2 red onion, finely sliced
  • 1/2 red bell pepper
  • 2-3 tbsp toasted sesame seeds
  • 1 tbsp olive or avocado oil for cooking

Preparation

  1. In a blender, combine all dressing ingredients until well combined.

  2. Press and cube the tofu

  3. Pour half the dressing on the tofu and let marinate for at least 30 minutes, the longer the better.

  4. Heat oil in a frying pan over medium heat and pan fry the tofu until lightly browned.

  5. Meanwhile, combine all other salad ingredients except for the sesame seeds.

  6. Toast the sesame seeds

  7. Once the tofu is cooled, toss the tofu, salad, and dressing together and top with sesame seeds.
