Simple Green Cream Pasta with Spinach

Ingredients

  • 1/4 cup raw cashews
  • 1/4 cup water
  • salt to taste
  • garlic to taste
  • 1/4 cup frozen chopped spinach

Add-ins

  • whole wheat linguine
  • peas
  • sun-dried tomatoes
  • black pepper

Preparation

  1. If your blender is not strong, soak the cashews in water first.

  2. Blend the cashews, water, salt, garlic, and spinach together.

  3. Adjust the consistency by adding more water 1 tablespoon at a time if needed.

  4. Serve the cream over the linguine with peas, sun-dried tomatoes, and black pepper.
