Simple One-Pot Vodka Beans and Greens

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cans butter beans or cannellini beans
  • 1/4 teaspoon crushed red pepper, optional
  • Freshly ground black pepper, to taste
  • 1 24 oz jar vodka sauce
  • 2/3 cup water
  • 12 oz bag of chopped kale or spinach
  • 4 oz mozzarella cheese, cubed or shredded
  • Salt, to taste
  • Parmesan cheese, for sprinkling on top
  • 1 baguette

Preparation

  1. Drizzle the olive oil into a Dutch oven over medium heat. Add the beans and cook for about 5 minutes, tossing occasionally until golden brown and crispy. Add the butter, red pepper flakes, and black pepper.

  2. Add the jarred sauce to the beans. Pour in the water and lemon juice, then stir. Simmer for about 20 minutes, stirring occasionally. Fold in the greens, tuck in the mozzarella, cover, and cook on medium-low for another 10-15 minutes, then remove from heat.

  3. Top with parmesan cheese. Serve with a torn baguette or other carbs and enjoy.
