Simple Spanish Tomato Bread
Ingredients
- Bread (ciabatta style)
- Tomatoes (better if very ripe)
- Garlic clove (optional)
- Olive oil
- Salt
Preparation
Cut the bread into small chunks and halve them horizontally if using ciabatta style, or slice it if using thick bread.
Toast the bread by drizzling with olive oil and baking in the oven until golden brown, or by heating olive oil in a pan and cooking the bread face down until golden brown.
If using garlic, cut a garlic clove in half and rub it on the toasted bread.
Prepare the tomato by either cutting it in half and rubbing it directly on the bread to add pulp, then seasoning with olive oil and salt, or by cutting it in half, grating it into a bowl, mixing with olive oil and salt, and spreading it onto the bread.
