Spicy Penne Pasta with Arrabbiata Sauce

Ingredients

  • some olive oil
  • 1 small onion
  • 1 chili
  • 3 cloves garlic
  • 2 tablespoons tomato paste
  • 800 grams chopped tomatoes
  • 1 teaspoon sugar
  • salt
  • pepper
  • chili powder
  • 500 grams pasta
  • 1/2 cup pasta water
  • dried chili flakes
  • oregano

Preparation

  1. Heat some olive oil in a pan over medium heat.

  2. Add 1 small onion (finely cubed) and 1 chili (finely sliced).

  3. Cook for about 1 minute until the onion becomes translucent.

  4. Add 3 cloves of garlic (minced) and cook for half a minute while stirring constantly.

  5. Add 2 tablespoons of tomato paste, 800 grams of chopped tomatoes, 1 teaspoon of sugar, some salt and pepper, and a bit more chili powder.

  6. Let that cook for about 10 minutes on low heat.

  7. Cook 500 grams of pasta in the meantime.

  8. Add the cooked pasta directly to the sauce with 1/2 cup of pasta water.

  9. Add some more salt and pepper to the sauce.

  10. Serve with dried chili flakes and a sprinkle of oregano or fresh parsley.

  11. This recipe makes 4 generous servings.
