Vegan Spaghetti with Tomato and Garlic

Ingredients

  • 1 onion
  • 2 cloves of garlic
  • 1 box of tomatoes (20 pieces)
  • 1 big handful of arugula
  • 0.5 dl vegan cream
  • 0.5 dl pasta water
  • 1 dl vegan shredded cheese
  • 1 tsp salt
  • 1 tsp black pepper
  • Spaghetti for 2

Preparation

  1. Cook spaghetti according to package instructions

  2. Chop the onion and garlic

  3. Add chopped onion and garlic to a pan and fry in a good amount of olive oil.

  4. Add the tomatoes and mash them, then add the arugula and stir.

  5. Add the remaining ingredients, spices, and cooked spaghetti.

  6. Mix everything together and serve in two bowls.

  7. Optionally, add extra salt on top.
