Vegan Malaysian Char Kway Teow

Ingredients

  • 200g homemade flat rice noodles
  • 1/2 block of firm tofu, diced
  • 100g choy sum
  • Handful mung bean sprouts
  • 3 cloves garlic, chopped
  • 1 small onion, chopped
  • 2 tbsp vegetarian oyster sauce
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1/2 tsp white pepper
  • 1 tsp dark soy sauce (optional)
  • 1/4 cup water, as needed
  • Oil for cooking

Preparation

  1. Heat oil and pan-fry the tofu until browned, then set aside.

  2. Add garlic and onion, and sauté until fragrant.

  3. Add choy sum and cook for 2 minutes.

  4. Add homemade flat rice noodles, vegetarian oyster sauce, sesame oil, soy sauce, white pepper, water, and dark soy sauce for coloring.

  5. Stir-fry for a few more minutes, then add mung bean sprouts.

  6. Stir-fry until all ingredients are well combined and transfer to a serving plate.

Tips

  1. Enjoy with sambal, chili garlic sauce, or bird's eye chili with soy sauce.
