Pan Fried Wonton Noodles
Ingredients
- 250g dried wonton noodles
- 1/3 cup carrots, thinly sliced
- 1/3 cup cabbage, thinly sliced
- 1 green chili, thinly sliced
- 2 tablespoons oil for cooking
- Toasted sesame seeds
Sauce
- 2 teaspoons soy sauce
- 1 teaspoon thick soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon shaoxing rice wine
- 1/4 teaspoon white pepper
- 1/4 teaspoon brown sugar
Preparation
Mix the soy sauce, thick soy sauce, sesame oil, shaoxing rice wine, white pepper, and brown sugar, and set aside.
Heat the wok over high heat, add 1 tablespoon oil, spread the noodles evenly, and fry until crisp on the bottom layer.
Flip the noodles and fry the other side, then remove from heat and set aside.
Heat 1 tablespoon oil in the wok, add carrots, cabbage, and chilies, and cook for 5 minutes.
Add the noodles and sauce mixture to the wok, toss continuously for a couple of minutes on high heat until the noodles are well coated with the sauce.
Serve immediately with a sprinkle of toasted sesame seeds.
