Warm Spiced Masala Milk
Ingredients
- 1/4 cup almonds
- 1/4 cup cashews
- 1/4 cup pistachios
- 1/2 nutmeg
- 8-10 cardamom seeds
- 1/2 teaspoon fennel seeds
- 8-10 peppercorns
- 1 teaspoon sugar, plus more to taste
- few saffron threads, optional
- 1/2 teaspoon dry ginger powder, optional
- 1.5 tablespoons milk powder, optional
- 2 cups milk
Preparation
Dry roast the almonds, cashews, and pistachios.
Let them cool down.
In a mixer jar, add half a nutmeg.
Add 8 to 10 cardamom seeds.
Add half a teaspoon of fennel seeds.
Add 8 to 10 peppercorns.
Add half a teaspoon of sugar to help with grinding.
Grind on pulse to make a powder.
Transfer the powder to a mixing bowl.
Add the roasted nuts to the mixer jar along with half a teaspoon of sugar.
Churn to make a fine powder.
Transfer this powder to the bowl with the spice mixture.
Add a few saffron threads if using.
Add half a teaspoon of dry ginger powder if using.
Add 1.5 tablespoons of milk powder if using.
Mix everything well.
Heat 2 cups of milk in a vessel.
Add sugar to taste.
Add 2 tablespoons of the doodh ka masala.
Let the milk boil nicely.
Enjoy the masala milk warm.
