Warm Spiced Masala Milk

Ingredients

  • 1/4 cup almonds
  • 1/4 cup cashews
  • 1/4 cup pistachios
  • 1/2 nutmeg
  • 8-10 cardamom seeds
  • 1/2 teaspoon fennel seeds
  • 8-10 peppercorns
  • 1 teaspoon sugar, plus more to taste
  • few saffron threads, optional
  • 1/2 teaspoon dry ginger powder, optional
  • 1.5 tablespoons milk powder, optional
  • 2 cups milk

Preparation

  1. Dry roast the almonds, cashews, and pistachios.

  2. Let them cool down.

  3. In a mixer jar, add half a nutmeg.

  4. Add 8 to 10 cardamom seeds.

  5. Add half a teaspoon of fennel seeds.

  6. Add 8 to 10 peppercorns.

  7. Add half a teaspoon of sugar to help with grinding.

  8. Grind on pulse to make a powder.

  9. Transfer the powder to a mixing bowl.

  10. Add the roasted nuts to the mixer jar along with half a teaspoon of sugar.

  11. Churn to make a fine powder.

  12. Transfer this powder to the bowl with the spice mixture.

  13. Add a few saffron threads if using.

  14. Add half a teaspoon of dry ginger powder if using.

  15. Add 1.5 tablespoons of milk powder if using.

  16. Mix everything well.

  17. Heat 2 cups of milk in a vessel.

  18. Add sugar to taste.

  19. Add 2 tablespoons of the doodh ka masala.

  20. Let the milk boil nicely.

  21. Enjoy the masala milk warm.
