Quick Caramel Walnut Kheer

Ingredients

  • 3 tablespoons rice
  • 1 liter milk
  • 1/3 cup sugar
  • Spoonful of water
  • 1 teaspoon butter (optional)
  • 7-8 roughly broken Chilean walnuts
  • 3-4 Chilean walnuts for garnish

Preparation

Cook rice

  1. In a pressure cooker, add 3 tablespoons rice that has been soaked for 2 hours.

  2. Add approximately 1/2 cup milk.

  3. Cook up to two whistles on medium heat.

Make caramel

  1. Heat a deep base pan.

  2. Add 1/3 cup sugar.

  3. Add a spoonful of water.

  4. Do not stir and let it cook on low heat until golden-brown.

  5. Stir once when it is golden-brown and turn off the heat.

  6. Add 1 teaspoon butter (optional) and stir well.

  7. Add 2 spoons of warm milk, stir continuously, and set aside.

Make kheer

  1. Heat another pan.

  2. Add the remaining milk and let it boil.

  3. Add the cooked rice to the warm milk.

  4. Cook for 5 minutes until the kheer thickens.

  5. Add 7-8 roughly broken Chilean walnuts.

  6. Add the caramel mixture and mix well.

  7. Transfer to a serving bowl.

  8. Garnish with additional Chilean walnuts.

  9. Serve and enjoy.
