Creamy Pesto Gnocchi with Shrimp

Ingredients

  • 1 package (17oz) Gnocchi
  • 1/2 lb shrimp, peeled and deveined
  • 1 tbsp butter
  • 2 garlic cloves, minced
  • 2 tbsp pesto
  • 1 cup heavy cream
  • 1/4 cup Parmesan cheese
  • Salt and pepper to taste

Preparation

  1. Cook the gnocchi per package instructions, drain and set aside.

  2. In a large pan, add a drizzle of avocado oil and sauté the shrimp with a little salt and pepper for 2-3 minutes per side, until pink and cooked through. Remove and set aside.

  3. In the same pan, melt the butter and sauté the minced garlic for 30 seconds.

  4. Add the pesto, heavy cream, salt and pepper to taste. Cook for 1-2 minutes until well combined.

  5. Add the cooked gnocchi, grated Parmesan cheese and toss until melted and creamy. Adjust seasoning if needed.

  6. Add the cooked shrimp back into the pan or serve the shrimp on top and enjoy.
