Easy and Healthy Lentil Samosas

Ingredients

  • 2 tins of lentils
  • 4-5 chopped garlic cloves
  • 1 medium chopped red onion
  • 2 tablespoons rapeseed oil
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon ground coriander and cumin powder
  • 2 teaspoons garam masala
  • 1 teaspoon Himalayan salt
  • 1/2 cup chopped coriander
  • Wholemeal wraps (as needed)
  • Butter (for brushing)

Optional

  • Mozzarella cheese

Preparation

  1. Heat the oil in a pan and fry the garlic and onions for 2 minutes.

  2. In the meantime, put your samosa maker on.

  3. Heat a little butter in the microwave to brush onto the samosa maker plates.

  4. Add the lentils to the fried garlic and onions.

  5. Add all the spices and salt and mix in.

  6. Let cook whilst you prep the wraps.

  7. Use scissors to cut your wholemeal wraps in half.

  8. Run them through water to soften the wraps, helping them bind better and crisp up.

  9. Add coriander to your lentil filling.

  10. Place the wraps onto the samosa maker and roughly fill the cavities, checking their location by pushing down with your fingers.

  11. Optionally, sprinkle mozzarella cheese over the top.

  12. Layer over with more wholemeal wraps.

  13. Let cool for 3 minutes then open and brush some butter over the samosas to help them crisp and shine.

  14. Cook for a few more minutes or until they’re brown.

  15. Remove the samosa block from the maker and cut up into individual samosas using a bread knife or scissors.

  16. Serve with spicy tamarind sauce or green chutney.
