Easy Vegan Falafel with Herbs and Spices

Ingredients

  • 400g cooked chickpeas, drained and rinsed
  • 1 small red onion
  • 1 garlic clove
  • Handful of parsley
  • 1 tsp. Ground cumin
  • 1 tsp. Ground coriander
  • 1 tsp. Chili powder (optional)
  • 2-3 tablespoons whole wheat flour
  • Pinch of salt to taste
  • 2 tablespoons coconut oil (optional, for frying)

Preparation

  1. Use a high-speed blender or food processor.

  2. Put all ingredients into the blender and blend until fairly smooth. Add a bit of water or chickpea water if needed for consistency.

  3. Shape the mixture into falafel patties with your hands.

  4. Bake in the oven at 185°C until golden brown or pan fry in a non-stick pan with coconut oil until golden brown.

  5. Enjoy your delicious falafel!
