Easy Vegan Falafel Patties
Ingredients
- 400g cooked chickpeas, drained and rinsed
- 1 small red onion
- 1 garlic clove
- Handful of parsley
- 1 tsp. Ground cumin
- 1 tsp. Ground coriander
- 1 tsp. Chili powder (optional)
- 2-3 tablespoon whole wheat flour
- Pinch of salt to taste
- 2 tablespoon coconut oil (only needed for frying)
Preparation
Preheat the oven to 185°C if baking
Use a high-speed blender or food processor to blend all ingredients until fairly smooth, adding a bit of water or water from the cooked chickpeas if needed to achieve a moist consistency.
Shape the mixture into falafel patties with your hands.
Bake in the oven until golden brown, or pan fry in a non-stick pan until golden brown; if using a regular pan, add coconut oil.
