Easy Vegan Falafel Patties

Ingredients

  • 400g cooked chickpeas, drained and rinsed
  • 1 small red onion
  • 1 garlic clove
  • Handful of parsley
  • 1 tsp. Ground cumin
  • 1 tsp. Ground coriander
  • 1 tsp. Chili powder (optional)
  • 2-3 tablespoon whole wheat flour
  • Pinch of salt to taste
  • 2 tablespoon coconut oil (only needed for frying)

Preparation

  1. Preheat the oven to 185°C if baking

  2. Use a high-speed blender or food processor to blend all ingredients until fairly smooth, adding a bit of water or water from the cooked chickpeas if needed to achieve a moist consistency.

  3. Shape the mixture into falafel patties with your hands.

  4. Bake in the oven until golden brown, or pan fry in a non-stick pan until golden brown; if using a regular pan, add coconut oil.
