Vegan Tandoori Pulled Jackfruit Burger
Ingredients
- 1/2 teaspoon rapeseed oil
- 1 teaspoon chopped garlic
- 1 jar jackfruit chunks
- 1 tablespoon tandoori masala
- 1/2 lime juice
- 1/2 red onion chopped
- 1/2 red pepper chopped
- 1/2 avocado per burger
- chopped coriander for garnish
- salt (optional)
Preparation
Heat the rapeseed oil in a pan and fry the chopped garlic for 1 minute, then add the jackfruit chunks.
Cook the jackfruit for 5-6 minutes, then mash it with a potato masher.
Add the tandoori masala and cook for a further 2 minutes on high heat.
Stir in the lime juice.
Assemble the burger by placing the pulled jackfruit mixture on a bun, top with chopped red onion, red pepper, avocado slices, and garnish with chopped coriander.
