Vegan Tandoori Pulled Jackfruit Burger

Ingredients

  • 1/2 teaspoon rapeseed oil
  • 1 teaspoon chopped garlic
  • 1 jar jackfruit chunks
  • 1 tablespoon tandoori masala
  • 1/2 lime juice
  • 1/2 red onion chopped
  • 1/2 red pepper chopped
  • 1/2 avocado per burger
  • chopped coriander for garnish
  • salt (optional)

Preparation

  1. Heat the rapeseed oil in a pan and fry the chopped garlic for 1 minute, then add the jackfruit chunks.

  2. Cook the jackfruit for 5-6 minutes, then mash it with a potato masher.

  3. Add the tandoori masala and cook for a further 2 minutes on high heat.

  4. Stir in the lime juice.

  5. Assemble the burger by placing the pulled jackfruit mixture on a bun, top with chopped red onion, red pepper, avocado slices, and garnish with chopped coriander.
