Easy Chicken Fajitas with Vegetables

Ingredients

  • 1 onion
  • olive oil
  • 2 chopped bell peppers
  • 3 carrots
  • 200g chopped tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon ground ginger
  • cooked chicken (optional)
  • 2 handfuls frozen peas
  • spinach
  • tortilla wraps
  • avocado
  • cheese

Preparation

  1. Sauté 1 onion in olive oil, then add 2 chopped peppers and 3 carrots, and cook for a few minutes.

  2. Add 200g chopped tomatoes, 1 teaspoon cumin, 1 teaspoon coriander, 1 teaspoon paprika, and 1 teaspoon ginger.

  3. Simmer the mixture and add cooked chicken if using; alternatively, cook the chicken with the onion at the start.

  4. Add 2 handfuls of frozen peas and spinach.

  5. Serve with wraps, smashed avocado, and cheese for fajitas.
