Easy Chicken Fajitas with Vegetables
Ingredients
- 1 onion
- olive oil
- 2 chopped bell peppers
- 3 carrots
- 200g chopped tomatoes
- 1 teaspoon cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1 teaspoon ground ginger
- cooked chicken (optional)
- 2 handfuls frozen peas
- spinach
- tortilla wraps
- avocado
- cheese
Preparation
Sauté 1 onion in olive oil, then add 2 chopped peppers and 3 carrots, and cook for a few minutes.
Add 200g chopped tomatoes, 1 teaspoon cumin, 1 teaspoon coriander, 1 teaspoon paprika, and 1 teaspoon ginger.
Simmer the mixture and add cooked chicken if using; alternatively, cook the chicken with the onion at the start.
Add 2 handfuls of frozen peas and spinach.
Serve with wraps, smashed avocado, and cheese for fajitas.
