Fragrant Pan-Fried Moroccan Msemmen

Ingredients

  • 250 g remilled semolina flour
  • 250 g all-purpose flour
  • 300 ml water
  • 8 g salt
  • 8 g fresh yeast
  • 1 teaspoon sugar
  • Melted butter
  • Sunflower oil
  • Remilled semolina

Preparation

  1. Mix the flours, yeast, salt, sugar, and water in a bowl and knead until smooth and elastic

  2. Let the dough rest covered for one hour

  3. Divide the dough into 8 balls of 100 g each and coat with a thin layer of oil

  4. Let the balls rest covered for 20 minutes

  5. Stretch each ball with your hands, using a little oil, until very thin

  6. Brush with melted butter and semolina, then fold like a book, adding butter and semolina each time to create layers

  7. Stretch again until a thin rectangle

  8. Cook on a well-heated buttered pan, turning frequently, until golden, crispy outside, and soft inside
