Fragrant Pan-Fried Moroccan Msemmen
Ingredients
- 250 g remilled semolina flour
- 250 g all-purpose flour
- 300 ml water
- 8 g salt
- 8 g fresh yeast
- 1 teaspoon sugar
- Melted butter
- Sunflower oil
- Remilled semolina
Preparation
Mix the flours, yeast, salt, sugar, and water in a bowl and knead until smooth and elastic
Let the dough rest covered for one hour
Divide the dough into 8 balls of 100 g each and coat with a thin layer of oil
Let the balls rest covered for 20 minutes
Stretch each ball with your hands, using a little oil, until very thin
Brush with melted butter and semolina, then fold like a book, adding butter and semolina each time to create layers
Stretch again until a thin rectangle
Cook on a well-heated buttered pan, turning frequently, until golden, crispy outside, and soft inside
