French Toast with Yogurt, Chia, and Blueberries

Ingredients

  • 1-2 bread slices (use your favourite bread)
  • 1 egg
  • yoghurt (dairy or dairy-free)
  • blueberry jam or warmed blueberries
  • chia seeds

Preparation

  1. Beat the egg into a shallow bowl.

  2. Put both sides of the bread slices into the egg mixture until well covered.

  3. Heat a non-stick pan and add oil if desired.

  4. Fry or bake the French toast on both sides.

  5. Once cooked, top with yoghurt, blueberry jam, and chia seeds.

Blueberry jam alternative

  1. If replacing jam, warm fresh or frozen blueberries in a pan.

  2. Simmer for a bit and add chia seeds to make blueberry chia jam.
