Healthy Blueberry Pancakes with Crispy Bacon

Ingredients

  • 100g spelt flour
  • 1 tsp baking powder
  • 1/2 bicarbonate of soda
  • 170g Greek yoghurt
  • 2 eggs
  • 50ml milk
  • 1/2 tsp cinnamon
  • 100g blueberries

Preparation

  1. Mix the dry ingredients together, omitting the blueberries.

  2. Mix the wet ingredients together.

  3. Combine the dry and wet mixtures.

  4. Heat oil in a pan over medium heat.

  5. Spoon about 2 tablespoons of batter into the pan to form a pancake shape and add 5-7 blueberries.

  6. Cook for about 2 minutes until golden and bubbling around the edges.

  7. Flip the pancake and cook the other side for the same amount of time.

  8. Remove when puffed up and fluffy.

  9. Serve with maple syrup or honey and crispy bacon.
