Pappa Al Pomodoro

Ingredients

  • Bread (the older, the better!) 200 gr
  • Juicy Tomatoes 4-6
  • Extra Virgin olive oil 1 tbsp
  • Garlic 1 clove
  • Basil 1 handful
  • Salt to taste
  • Vegetable broth around 500ml

Preparation

  1. In a pan heat up the oil with grated garlic

  2. Add fresh tomatoes chopped (you can also use the tinned ones, although fresh are better). 3.Add bread cut into cubes and the broth

  3. Season with salt and simmer with the lid on for around 20-30 minutes (until the bread is soft)

  4. Sprinkle with fresh basil leaves and serve with some olive oil on top
