Pumpkin Tortelli with a Simple Sage Butter
Ingredients
- 100g ghee chopped (You can use unsalted butter if you prefer)
- 16-20 small fresh sage leaves
- Salt, to taste
Preparation
Place ghee into a large frying pan over medium heat. Cook until melted then add sage leaves to pan
Cook for 4-5 minutes or until sage leaves are crisp and ghee has turned a deep nut-brown colour
Season to taste with salt and pepper
Pour over your tortelli and finish with some nutritional yeast
