Small Cauliflower Tofu Tots with Vegan Salad

Ingredients

  • 1 tablespoon flax seeds
  • 4 tablespoons water
  • Half a medium cauliflower head (300g)
  • 200g tofu
  • Salt and pepper

Preparation

  1. Mix flax seeds with water and set aside.

  2. Break apart the cauliflower into florets.

  3. Add some water in a pot and add in the cauliflower pieces, cook for 6-7 minutes. Do not overcook.

  4. Roughly chop the cauliflower into very small chunks and chop the tofu first into finely small pieces.

  5. Mix the tofu and cauliflower roughly together with your hands or in a small food processor.

  6. Add the flax seeds and mix together to get a sticky combined texture.

  7. Shape the tots into round forms and add them to warm oil in a small saucepan. You can also roll them in breadcrumbs before cooking for a more crispy taste.

  8. Cook the tots for a few minutes until crispy and golden.

  9. Once cooked, place on a plate with paper towels to drain the oil.

  10. Serve in salad bowls or with mayo or sauce.
