Easy Vegan Gluten-Free Buckwheat Bread

Ingredients

  • 450 grams green buckwheat
  • 1 teaspoon salt
  • 50 grams flax seeds (optional)
  • 50 grams pumpkin seeds
  • 30 grams sunflower seeds
  • 280 grams water

Preparation

  1. Soak the buckwheat overnight or for 8 to 12 hours.

  2. In the morning, drain and rinse it well.

  3. Transfer to a blender with 1 teaspoon salt and 280 grams water, and blend until smooth.

  4. Add the flax seeds and blend a few times to grind most of them, as this helps to get maximum benefit from them.

  5. Add the remaining seeds and mix until evenly distributed.

  6. Transfer the dough to a baking pan and let it rise overnight or until significantly increased; longer if the house is cold.

  7. Bake in a preheated oven at 180°C for 50-60 minutes or until golden brown.
