Easy Vegan Gluten-Free Buckwheat Bread
Ingredients
- 450 grams green buckwheat
- 1 teaspoon salt
- 50 grams flax seeds (optional)
- 50 grams pumpkin seeds
- 30 grams sunflower seeds
- 280 grams water
Preparation
Soak the buckwheat overnight or for 8 to 12 hours.
In the morning, drain and rinse it well.
Transfer to a blender with 1 teaspoon salt and 280 grams water, and blend until smooth.
Add the flax seeds and blend a few times to grind most of them, as this helps to get maximum benefit from them.
Add the remaining seeds and mix until evenly distributed.
Transfer the dough to a baking pan and let it rise overnight or until significantly increased; longer if the house is cold.
Bake in a preheated oven at 180°C for 50-60 minutes or until golden brown.
