Fruit and Nut Buckwheat Loaf

Ingredients

  • 1 1/4 cups buckwheat flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • pinch of salt
  • 220g walnut pieces
  • 220g dried fruit (apricots, dates, and figs)
  • 60g sunflower seeds
  • 50g pumpkin seeds
  • 1/4 cup macadamia or avocado oil
  • 1 1/4 cup water

Preparation

  1. Preheat the oven to 180 °C. Grease a loaf tin and line it with baking paper.

  2. Mix the flour with the baking powder, baking soda, salt and cinnamon.

  3. Chop nuts and dried fruit and add to the flour mixture together with the seeds.

  4. Add water and oil and stir to combine. The dough must be quite sticky and wet.

  5. Place the dough in the loaf tin and sprinkle with seeds.

  6. Bake for 35 minutes or until a knife comes out clean.

  7. Let cool before slicing.
