Spinach Chickpea Pancakes
Ingredients
- 75g chickpea/gram flour
- 100ml water
- handful of fresh spinach
- 1 tbsp nutritional yeast
- 1/2 tsp of oregano
- avocado/coconut oil for frying
Preparation
Blend the ingredients in a blender until a smooth batter forms
Heat a small amount of oil in a non stick frying pan. Make sure the pan is not too hot, you want it to be on a medium/low temperature
Add a tablespoon of mixture at a time, once bubbles appear flip over the pancakes
These freeze brilliantly (just put parchment between them to stop them sticking) or keep in the fridge for a week! -
