Spinach Chickpea Pancakes

Ingredients

  • 75g chickpea/gram flour
  • 100ml water
  • handful of fresh spinach
  • 1 tbsp nutritional yeast
  • 1/2 tsp of oregano
  • avocado/coconut oil for frying

Preparation

  1. Blend the ingredients in a blender until a smooth batter forms

  2. Heat a small amount of oil in a non stick frying pan. Make sure the pan is not too hot, you want it to be on a medium/low temperature

  3. Add a tablespoon of mixture at a time, once bubbles appear flip over the pancakes

  4. These freeze brilliantly (just put parchment between them to stop them sticking) or keep in the fridge for a week! -
