Tasty Mexican Rice and Bean Bowl
Ingredients
- 1 cup black beans
- 1 cup brown rice
- orange bell pepper
- white onion
- baby kale/arugula
- grape tomatoes
- avocado
- tj green dragon hot sauce
Preparation
Cook your brown rice following the label instructions; it takes about 20 minutes.
In the meantime, cut up the bell peppers and sauté them in avocado oil with onion until they are soft to touch.
Next, start your black beans in a pan with spices (cumin, chili, garlic, salt), add some water, stir, cover with a lid, and cook for 5-10 minutes until warm.
Once all is cooked, plate with a bed of greens on the bottom, then add the cooked items, and top with hot sauce, avocado, and tomatoes.
