Protein Loaded Bowl

Ingredients

  • For the dressing
  • 1 tbsp peanut butter
  • 1 tbsp maple syrup
  • 1 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • For the bowl
  • lettuce
  • cooked brown rice
  • roasted sweet potatoes
  • chickpeas
  • cherry tomatoes
  • avocado

Preparation

  1. Add peanut butter, maple syrup, balsamic vinegar and soy sauce in a jar

  2. Open an avocado and pop the seed in there and shake well to combine

  3. Remove the seed

  4. In a big bowl, add lettuce, cooked brown rice, roasted sweet potatoes, chickpeas, cherry tomatoes and avocado

  5. Drizzle the dressing on top

  6. Enjoy!? ⁣⁣⁣
