Vegan Strawberry Pancakes with Gluten-Free Option
Ingredients
- 2 tbsp sugar
- 2 tsp baking powder
- 1 cup almond milk
- 1 tsp vanilla
- 1 cup all purpose flour
- 1/2 cup diced strawberries
Preparation
In one bowl, mix the sugar, baking powder, almond milk, and vanilla. Then, whisk in the flour until the batter is smooth.
Heat a non stick skillet to medium heat on the stove. Spray with cooking oil or use vegan butter to coat the pan.
Once the oil or butter is hot, spoon in about 3 tbsp of batter per pancake. Then, drop a few pieces of strawberry onto the top of the batter. Cook until bubbles form in the pancakes and then flip. It should be golden browned.
