Vegan Zucchini Crisps with Dipping Sauce

Ingredients

  • 2 small zucchinis
  • 1 cup of flour
  • Pinch of salt
  • 1/2 cup of vegetable broth
  • 1/3 cup of water
  • 1 cup bread crumbs
  • 1/3 cup of nutritional yeast or parmigian
  • 1 tsp paprika
  • Oil for frying

Sauce

  • 1/2 cup unsweetened soy yogurt
  • 2 tbsp lemon juice
  • 1 tbsp coriander

Preparation

  1. Slice zucchinis in 1cm thick slices

  2. Mix together flour, salt, broth and water

  3. In another bowl mix bread crumbs with nutritional yeast and paprika

  4. Season zucchinis with salt and pepper and first dip into flour mixture and then in bread crumbs and fry 3mins from each side

  5. For the dipping sauce mix together soy yogurt, lemon juice and coriander
