Clay Pot Mutton Bhuna

Ingredients

  • 1 kilo mutton
  • 3 chopped medium onions
  • thumb size piece of ginger
  • 5 garlic cloves
  • 2 medium tomatoes
  • 4 green cardamoms
  • 3-4 cinnamon sticks
  • 3-4 bay leaves
  • pinch of fenugreek seeds
  • 2 tsp salt
  • 1 tsp chilli powder
  • 1 tsp Kashmiri Chilli powder
  • 1 tsp turmeric powder
  • 2 tsp curry powder
  • 1.5 tsp cumin powder
  • 1.5 tsp coriander powder
  • 1/2 cup Greek yoghurt
  • 2-3 large serving spoons of oil (about 60-70ml)
  • coriander for garnish

Preparation

  1. Marinate the mutton with all of the ingredients listed above except coriander. If using a clay pot, ensure it is prepared in advance for cooking.

  2. Place the meat on low heat to cook for about 2 to 2.5 hours, stirring occasionally to prevent burning. Cook in its own juices until tender; the dish should be slightly dry as it is a bhuna.

  3. Garnish with coriander and serve hot with rice, naan, or roti.

Tips

  1. You can cook this curry in a normal saucepan over low heat to achieve similar results.

  2. The slow cooking process enhances the flavor, and cooking time may vary based on pot type and desired meat doneness.
